Ingredients
- 4 free-range eggs
- 150g red or black seedless grapes
- 80g Kalamata olives
- 150g cherry tomatoes
- ½ red onion
- 1 garlic clove
- 1 tbsp extra virgin olive oil
- 1 tsp chopped fresh rosemary
- 2 handfuls baby spinach
- Black pepper
Method
- Preheat the oven to 190°C.
- Place grapes, tomatoes, onion and olives in a baking dish.
- Add olive oil, garlic and rosemary.
- Roast for 10 minutes.
- Stir through the spinach.
- Make four spaces between the vegetables.
- Crack an egg into each space.
- Bake for another 8–10 minutes until the whites are set.
Why it’s good
Red and black grapes contain several polyphenols, including anthocyanins and resveratrol.
Olives and extra virgin olive oil provide their own distinctive phenolic compounds.
Red onion contributes quercetin, while tomatoes provide additional plant compounds.
Rosemary is also unusually concentrated in aromatic polyphenols.
