Pear, Cranberry & Ginger Almond Crumble

Ingredients

  • 3 firm pears, skin left on
  • 120g fresh or frozen cranberries
  • 15g fresh ginger, finely grated
  • 1 tsp cinnamon
  • Zest of 1 orange
  • 60g ground almonds
  • 40g flaked almonds
  • 40g certified gluten-free oats
  • 2 tbsp extra virgin olive oil
  • 1 tbsp maple syrup

Method

  1. Preheat the oven to 180°C.
  2. Core and slice the pears without peeling them.
  3. Combine with cranberries, ginger, cinnamon and orange zest.
  4. Transfer to a small baking dish.
  5. Mix the ground almonds, flaked almonds and oats.
  6. Add olive oil and maple syrup.
  7. Scatter the crumble mixture over the fruit.
  8. Bake for 25–30 minutes until golden and bubbling.

 

Why it’s good

Cranberries contain a particularly interesting mixture of anthocyanins, flavonols and proanthocyanidins.

Pears provide flavonoids and phenolic acids, with many concentrated in or near their skin.

Ginger contains distinctive phenolic compounds called gingerols.

Cinnamon and orange zest add still more polyphenol diversity.
