Ingredients
- 250g pitted dark cherries
- 3 free-range eggs
- 200ml unsweetened almond milk
- 50g ground almonds
- 20g unsweetened cocoa powder
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- ½ tsp cinnamon
- 20g flaked almonds
Method
- Preheat the oven to 180°C.
- Arrange the cherries in a lightly greased baking dish.
- Whisk the eggs, almond milk, ground almonds and cocoa.
- Add maple syrup, vanilla and cinnamon.
- Pour the mixture around the cherries.
- Scatter the flaked almonds over the top.
- Bake for 25–30 minutes until just set.
- Allow to cool slightly before serving.
Why it’s good
Dark cherries provide anthocyanins, which give them their characteristic deep red colour.
Cocoa is exceptionally rich in a group of polyphenols called flavanols.
Almonds also contain flavonoids and phenolic acids.
This recipe shows that polyphenol-rich food doesn’t always have to mean salads and savoury dishes.
