Ingredients

  • 200g raw king prawns

  • 1 tbsp olive oil

  • 2 garlic cloves, minced

  • 1 red pepper, sliced

  • 2 handfuls spinach

  • Juice of ½ lemon

  • 1 tbsp parsley, chopped

Method

  1. Cook garlic in olive oil, then add prawns until pink.

  2. Add red pepper and spinach; cook until softened.

  3. Finish with lemon juice and parsley.

Why it’s good for eye health:
King prawns provide zinc and omega-3s, while spinach offers lutein and zeaxanthin to protect the retina.
