Ingredients

  • 1 cup green lentils

  • 1 onion, diced

  • 2 garlic cloves, minced

  • 2 cups kale, chopped

  • 750ml vegetable stock

  • Juice of ½ lemon

  • 1 tbsp olive oil

Method

  1. Sauté onion and garlic.

  2. Add lentils and stock; simmer for 20 mins.

  3. Stir in kale and lemon juice, cook 5 mins.

Why it’s good for eye health:
Lentils offer zinc and iron, while kale provides lutein and vitamin K to protect the cornea and ocular tissue.
