Ingredients
1 tbsp olive oil
1 onion, chopped
2 garlic cloves, minced
1-inch piece of ginger, grated
4 carrots, chopped
1 red pepper, chopped
700ml vegetable stock
Juice of ½ orange
Salt and pepper
Method
Sauté onion, garlic, and ginger in olive oil.
Add carrots, pepper, and stock; simmer for 20 mins.
Blend smooth, add orange juice, and season.
