Ingredients

  • 1 tbsp olive oil

  • 1 onion, chopped

  • 2 garlic cloves, minced

  • 1-inch piece of ginger, grated

  • 4 carrots, chopped

  • 1 red pepper, chopped

  • 700ml vegetable stock

  • Juice of ½ orange

  • Salt and pepper

Method

  1. Sauté onion, garlic, and ginger in olive oil.

  2. Add carrots, pepper, and stock; simmer for 20 mins.

  3. Blend smooth, add orange juice, and season.

Why it’s good for eye health:
Carrots and peppers are rich in beta-carotene and vitamin C, while ginger supports the ocular microbiome and reduces inflammation.
