Ingredients
- 200g firm tofu, cubed
- 100g edamame beans
- 1 Little Gem lettuce
- ½ red cabbage, finely shredded
- 1 small carrot, grated
- 1 tbsp sesame seeds
- 1 tsp sesame oil
- Juice of 1 lime
- 1 tsp tamari
- Fresh coriander
Method
- Pan-fry the tofu until golden and crisp on each side.
- Cook the edamame and allow them to cool slightly.
- Separate the Little Gem leaves to create cups.
- Fill with cabbage, carrot, edamame and crispy tofu.
- Mix the sesame oil, lime and tamari.
- Drizzle over the cups and finish with sesame seeds and coriander.
Why it’s good
Tofu and edamame provide plant protein alongside fibre, making these surprisingly filling for such a light meal.
Protein, fibre and dietary fat slow digestion and can support normal signals involved in appetite regulation.
Edamame also provides fermentable fibre, connecting gut health with the mechanisms influencing satiety.
