Ingredients

  • 2 chicken breasts
  • 2 large handfuls rocket
  • 200g watermelon, diced
  • ½ cucumber, diced
  • Fresh mint leaves
  • 2 tbsp extra virgin olive oil
  • Juice of ½ lime
  • Black pepper

Method

  • Grill the chicken breasts until cooked through and slice.
  • Combine the watermelon, cucumber and chopped mint.
  • Arrange the rocket on serving plates.
  • Add the sliced chicken and spoon over the watermelon salsa.
  • Finish with olive oil and lime juice.


Why it’s good

This refreshing summer meal replaces heavier chicken salads with a lighter, hydrating option. Rocket is naturally rich in dietary nitrates, helping support nitric oxide production. Watermelon contains citrulline, an amino acid that the body converts into arginine, which is then used to produce nitric oxide. Together they provide a natural combination of nutrients that support healthy blood flow and circulation.
