Ingredients
- 2 chicken breasts
- 2 large handfuls rocket
- 200g watermelon, diced
- ½ cucumber, diced
- Fresh mint leaves
- 2 tbsp extra virgin olive oil
- Juice of ½ lime
- Black pepper
Method
- Grill the chicken breasts until cooked through and slice.
- Combine the watermelon, cucumber and chopped mint.
- Arrange the rocket on serving plates.
- Add the sliced chicken and spoon over the watermelon salsa.
- Finish with olive oil and lime juice.
