Ingredients
- 250g turkey breast, diced
- 2 celery stalks, finely diced
- 30g walnuts, roughly chopped
- 1 Little Gem lettuce
- 2 tbsp extra virgin olive oil
- Juice of ½ lemon
- Fresh parsley
- Black pepper
Method
- Heat half the olive oil in a frying pan and cook the turkey until golden and cooked through.
- Allow to cool slightly before mixing with the celery, walnuts and parsley.
- Add the remaining olive oil and lemon juice.
- Spoon the mixture into the lettuce leaves.
- Season with black pepper and serve immediately.
