Ingredients

  • 250g turkey breast, diced
  • 2 celery stalks, finely diced
  • 30g walnuts, roughly chopped
  • 1 Little Gem lettuce
  • 2 tbsp extra virgin olive oil
  • Juice of ½ lemon
  • Fresh parsley
  • Black pepper

Method

  • Heat half the olive oil in a frying pan and cook the turkey until golden and cooked through.
  • Allow to cool slightly before mixing with the celery, walnuts and parsley.
  • Add the remaining olive oil and lemon juice.
  • Spoon the mixture into the lettuce leaves.
  • Season with black pepper and serve immediately.


Why it’s good

These lettuce wraps are a lighter alternative to sandwiches or wraps while still being satisfying. Celery naturally contains dietary nitrates that contribute to nitric oxide production, helping to relax blood vessels and support healthy circulation. Walnuts provide omega-3 fats that benefit cardiovascular health, while turkey supplies lean protein to help maintain steady energy and concentration.
