Ingredients
- 250g lean beef strips
- 1 small head broccoli
- 100g sugar snap peas
- 30g cashews
- 1 thumb-sized piece fresh ginger, grated
- 1 garlic clove, crushed
- 1 tbsp tamari
- 1 tsp sesame oil
- 100g cooked brown rice
Method
- Heat a large frying pan and quickly cook the beef strips.
- Remove the beef and add the broccoli and sugar snap peas.
- Add ginger and garlic and stir-fry until just tender.
- Return the beef to the pan and add the tamari.
- Divide the brown rice between two bowls.
- Top with the beef mixture, cashews and sesame oil.

Lean beef provides substantial protein, while broccoli, sugar snap peas and brown rice contribute fibre.
Cashews add healthy fats, creating a combination that digests more slowly than a conventional refined rice-based stir-fry.
