Ingredients
- 1 x 400g tin cannellini beans, drained
- 200g asparagus, trimmed
- 200g artichoke hearts, drained and quartered
- 2 handfuls rocket
- ½ cucumber, sliced
- 2 tbsp extra virgin olive oil
- Juice and zest of 1 lemon
- 1 small garlic clove
- 2 tbsp capers
- Large handful fresh parsley
- Small handful fresh mint
- Black pepper
Method
- Steam or griddle the asparagus until just tender.
- Arrange the beans, artichokes, asparagus, rocket and cucumber on two plates.
- Finely chop the parsley, mint, garlic and capers.
- Combine them with the olive oil, lemon juice and zest.
- Spoon the salsa verde generously over the vegetables and beans.
- Finish with freshly ground black pepper.
