Ingredients

  • 3 cups/ 175g coconut flakes
  • 2 cups (250g) almonds, cashews, pecans, walnuts, pumpkin seeds, roughly chopped
  • 2 tablespoons of chia seeds
  • 1 teaspoon ground cinnamon
  • 80-100g coconut oil or butter

Method

  1. Preheat the oven to 120 degrees.
  2. Line a baking tray with baking paper
  3. Combine all the ingredients, then spread evenly on the tray
  4. Bake for 15-20 minutes until golden, turning halfway through (the darker it is, the crunchier)
  5. Remove from the oven, cool, eat whilst still crunchy
  6. If you wish to add more body, add gluten-free oats to the mix; you may need a little more butter /oil
  7. Serve with coconut yoghurt, berries, and nut milk
