Ingredients
- 3 cups/ 175g coconut flakes
- 2 cups (250g) almonds, cashews, pecans, walnuts, pumpkin seeds, roughly chopped
- 2 tablespoons of chia seeds
- 1 teaspoon ground cinnamon
- 80-100g coconut oil or butter
Method
- Preheat the oven to 120 degrees.
- Line a baking tray with baking paper
- Combine all the ingredients, then spread evenly on the tray
- Bake for 15-20 minutes until golden, turning halfway through (the darker it is, the crunchier)
- Remove from the oven, cool, eat whilst still crunchy
- If you wish to add more body, add gluten-free oats to the mix; you may need a little more butter /oil
- Serve with coconut yoghurt, berries, and nut milk
