Lemon Herb Chicken with Cauliflower Rice

Ingredients

  • 2 chicken breasts (grilled and sliced)
  • 1 avocado (sliced)
  • 4 cups mixed greens
  • 1 cucumber (sliced)
  • Juice of 1 lime
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Method

  • Heat 1 tablespoon olive oil in a pan over medium heat.
  • Season chicken with salt, pepper, and thyme. Cook for 6–7 minutes per side until golden and cooked through.
  • Remove chicken and set aside.
  • In the same pan, heat the remaining olive oil and sauté garlic until fragrant.
  • Add grated cauliflower and cook for 5–7 minutes until tender.
  • Squeeze lemon juice over the cauliflower rice and stir in parsley.
  • Serve the chicken over the cauliflower rice.
