Ingredients
- 2 chicken breasts (grilled and sliced)
- 1 avocado (sliced)
- 4 cups mixed greens
- 1 cucumber (sliced)
- Juice of 1 lime
- 2 tablespoons olive oil
- Salt and pepper to taste
Method
- Heat 1 tablespoon olive oil in a pan over medium heat.
- Season chicken with salt, pepper, and thyme. Cook for 6–7 minutes per side until golden and cooked through.
- Remove chicken and set aside.
- In the same pan, heat the remaining olive oil and sauté garlic until fragrant.
- Add grated cauliflower and cook for 5–7 minutes until tender.
- Squeeze lemon juice over the cauliflower rice and stir in parsley.
- Serve the chicken over the cauliflower rice.
