Ingredients

  • 1 cup spinach (fresh)
  • 1/2 cup coconut cream
  • 1 tbsp nutritional yeast
  • 1/4 tsp turmeric
  • Salt and pepper to taste

Method

  1. Heat a pan over medium heat.
  2. Add spinach and cook until wilted.
  3. Stir in coconut cream, turmeric, nutritional yeast, salt and pepper.
  4. Simmer for 3–5 minutes until creamy.

 

Why it’s good for keto:
High in fats from coconut and low in carbs, this vegan dish also provides antioxidants and plant-based protein.
