Ingredients

  • 500g chicken breast (cubed)
  • 2 tbsp coconut oil
  • 1 can coconut milk
  • 2 tbsp curry powder
  • 1 onion (chopped)
  • 2 garlic cloves (minced)
  • 1 tbsp fresh ginger (grated)
  • Salt and pepper to taste

Method

  • Heat coconut oil in a large pan over medium heat.
  • Add onion, garlic, and ginger, sauté until fragrant.
  • Add chicken and cook until browned.
  • Stir in curry powder, coconut milk, salt, and pepper.
  • Simmer for 15 minutes until chicken is cooked through.
  • Serve with cauliflower rice or on its own.
