Ingredients
- 500g chicken breast (cubed)
- 2 tbsp coconut oil
- 1 can coconut milk
- 2 tbsp curry powder
- 1 onion (chopped)
- 2 garlic cloves (minced)
- 1 tbsp fresh ginger (grated)
- Salt and pepper to taste
Method
- Heat coconut oil in a large pan over medium heat.
- Add onion, garlic, and ginger, sauté until fragrant.
- Add chicken and cook until browned.
- Stir in curry powder, coconut milk, salt, and pepper.
- Simmer for 15 minutes until chicken is cooked through.
- Serve with cauliflower rice or on its own.
