Ingredients
- 100g certified gluten-free rolled oats
- 150ml strongly brewed green tea, cooled
- 150g plain Greek-style yoghurt
- 1 tbsp chia seeds
- 150g raspberries
- 30g pistachios
- 1 kiwi fruit
- ½ tsp vanilla extract
- 1 tsp honey, optional
Method
- Brew the green tea and allow it to cool completely.
- Mix the oats, tea, yoghurt, chia and vanilla.
- Lightly crush half the raspberries into the mixture.
- Divide between two jars or bowls.
- Refrigerate overnight.
- Top with the remaining raspberries and sliced kiwi.
- Scatter with chopped pistachios before serving.
Why it’s good
Green tea is especially rich in catechins, including EGCG.
Raspberries provide anthocyanins and ellagitannins.
Kiwi contains additional phenolic compounds, while pistachios provide flavonoids and phenolic acids.
Using green tea as an ingredient demonstrates that polyphenols aren’t restricted to colourful fruit and vegetables
