Ingredients
- 2 large handfuls fresh watercress
- 1 ripe pear, thinly sliced
- 30g walnuts
- 1 tbsp pumpkin seeds
- 2 tbsp extra virgin olive oil
- 1 tsp wholegrain mustard
- Juice of ½ lemon
Method
- Arrange the watercress onto two plates.
- Add the sliced pear.
- Scatter over the walnuts and pumpkin seeds.
- Mix the olive oil, mustard and lemon juice.
- Spoon over the dressing before serving.
