Ingredients
4 eggs
1 leek, sliced
200g cooked new potatoes, sliced
1 tbsp chopped parsley
1 tsp chopped dill
1 tbsp olive oil
Salt and pepper
Method
Preheat oven to 180°C.
Sauté leeks in olive oil. Add potatoes.
Beat eggs, mix in herbs and pour into the pan.
Cook for 5 mins, then bake in oven for 15 mins.
Slice and serve warm or cold.
