Ingredients

  • 4 eggs

  • 1 leek, sliced

  • 200g cooked new potatoes, sliced

  • 1 tbsp chopped parsley

  • 1 tsp chopped dill

  • 1 tbsp olive oil

  • Salt and pepper

Method

  1. Preheat oven to 180°C.

  2. Sauté leeks in olive oil. Add potatoes.

  3. Beat eggs, mix in herbs and pour into the pan.

  4. Cook for 5 mins, then bake in oven for 15 mins.

  5. Slice and serve warm or cold.

Why it’s good for gut health:
Leeks are rich in prebiotic inulin. Fresh herbs aid digestion and reduce inflammation.
