Ingredients
200g rice noodles
1 tbsp sesame oil
2 garlic cloves, minced
1 carrot, julienned
1 bell pepper, sliced
100g bean sprouts
2 tbsp tamari (gluten-free soy sauce)
Method
Cook rice noodles as per package instructions.
Heat sesame oil, sauté garlic for 1 minute.
Add vegetables, stir-fry for 5 minutes.
Add noodles and tamari, toss to combine.
Serve hot.
Why it’s good:
A quick, fibre-rich dish that’s lower in fat than traditional chow mein.
