Ingredients

  • 200g rice noodles

  • 1 tbsp sesame oil

  • 2 garlic cloves, minced

  • 1 carrot, julienned

  • 1 bell pepper, sliced

  • 100g bean sprouts

  • 2 tbsp tamari (gluten-free soy sauce)

Method

  1. Cook rice noodles as per package instructions.

  2. Heat sesame oil, sauté garlic for 1 minute.

  3. Add vegetables, stir-fry for 5 minutes.

  4. Add noodles and tamari, toss to combine.

  5. Serve hot.

Why it’s good:
A quick, fibre-rich dish that’s lower in fat than traditional chow mein.
