Ingredients
400g Jerusalem artichokes, peeled and chopped
2 garlic cloves, sliced
1 small onion, diced
500ml vegetable stock
1 tbsp olive oil
Salt and pepper to taste
Method
Sauté onion and garlic in olive oil until soft.
Add artichokes and stock, simmer for 20 mins until tender.
Blend until smooth, season and serve.

Jerusalem artichokes are high in inulin, a powerful prebiotic fibre. Garlic also supports beneficial bacteria.
