Turmeric-Tahini Roasted Cauliflower with Lentils & Parsley

Ingredients

  • 1 small cauliflower, florets

  • 1 tbsp olive oil

  • 1 tsp turmeric

  • ½ tsp cumin

  • 1 cup cooked green lentils

  • 2 tbsp tahini

  • Juice of 1 lemon

  • 2 tbsp chopped parsley

  • Sea salt & pepper

Method

  1. Toss cauliflower with spices and roast at 200°C for 20–25 mins.

  2. Whisk tahini and lemon to form a dressing.

  3. Serve cauliflower over lentils and drizzle dressing.

  4. Garnish with parsley.
