Ingredients
1 small cauliflower, florets
1 tbsp olive oil
1 tsp turmeric
½ tsp cumin
1 cup cooked green lentils
2 tbsp tahini
Juice of 1 lemon
2 tbsp chopped parsley
Sea salt & pepper
Method
Toss cauliflower with spices and roast at 200°C for 20–25 mins.
Whisk tahini and lemon to form a dressing.
Serve cauliflower over lentils and drizzle dressing.
Garnish with parsley.
