Ingredients

  • 100g quinoa

  • 2 large carrots, sliced

  • 1 tsp turmeric

  • 1 tbsp olive oil

  • 1 tbsp pumpkin seeds

  • Salt and pepper

  • Fresh parsley, chopped

Method

  1. Roast carrots at 200°C with oil and turmeric for 20 minutes.

  2. Simmer quinoa in water for 15 minutes.

  3. Fluff quinoa, top with carrots, seeds, and parsley.

Why it’s good:
Quinoa is rich in plant protein. Carrots and turmeric reduce inflammation and nourish the gut.
