Ingredients
1 tbsp coconut oil
1 onion, diced
2 garlic cloves, minced
1 tsp grated ginger
1 tsp turmeric
1 tsp cumin
1 small cauliflower, chopped
1 tin coconut milk
1 tbsp lime juice
1 cup spinach leaves
Salt to taste
Method
Heat coconut oil, sauté onion, garlic, and ginger until fragrant.
Add turmeric and cumin; stir for 30 seconds.
Add cauliflower and coconut milk; simmer 15–20 minutes.
Stir in lime juice and spinach; cook for 2 minutes.
Why it’s good for mental health:
Turmeric (curcumin) supports serotonin regulation and reduces brain inflammation. Coconut milk provides medium-chain fats for energy to brain cells.
