Ingredients

  • 1 tbsp coconut oil

  • 1 onion, diced

  • 2 garlic cloves, minced

  • 1 tsp grated ginger

  • 1 tsp turmeric

  • 1 tsp cumin

  • 1 small cauliflower, chopped

  • 1 tin coconut milk

  • 1 tbsp lime juice

  • 1 cup spinach leaves

  • Salt to taste

Method

  1. Heat coconut oil, sauté onion, garlic, and ginger until fragrant.

  2. Add turmeric and cumin; stir for 30 seconds.

  3. Add cauliflower and coconut milk; simmer 15–20 minutes.

  4. Stir in lime juice and spinach; cook for 2 minutes.

Why it’s good for mental health:
Turmeric (curcumin) supports serotonin regulation and reduces brain inflammation. Coconut milk provides medium-chain fats for energy to brain cells.
