Ingredients
- 200g firm tofu, cubed
- 1 tbsp olive or coconut oil
- 1 head pak choi, chopped
- 1 small courgette, sliced
- 1 tbsp coconut aminos (soy-free alternative)
- 1/2 tsp grated ginger (optional)
Method
- Heat oil in a pan, add tofu cubes, and cook for 4–5 minutes until golden.
- Add pak choi, courgette, ginger, and coconut aminos. Stir-fry for another 4–5 minutes.
- Serve hot with extra herbs if desired.
