Ingredients

  • 200g firm tofu, cubed
  • 1 tbsp olive or coconut oil
  • 1 head pak choi, chopped
  • 1 small courgette, sliced
  • 1 tbsp coconut aminos (soy-free alternative)
  • 1/2 tsp grated ginger (optional)

Method

  1. Heat oil in a pan, add tofu cubes, and cook for 4–5 minutes until golden.
  2. Add pak choi, courgette, ginger, and coconut aminos. Stir-fry for another 4–5 minutes.
  3. Serve hot with extra herbs if desired.

Quick stir-fry with minimal ingredients. High protein, fresh veg, and no need for heavy sauces or grains.
