Ingredients

  • 200g king prawns, peeled
  • 1 tbsp coconut oil
  • 2 tbsp Thai red curry paste (check gluten-free)
  • 1/2 red onion, thinly sliced
  • 1 carrot, julienned
  • 150ml coconut milk
  • 1 tbsp lime juice
  • Fresh coriander to garnish

Method

  1. Heat coconut oil in a pan and sauté onion for 2 minutes.
  2. Add red curry paste and stir for 30 seconds.
  3. Add prawns, carrots, and coconut milk. Simmer for 10 minutes.
  4. Finish with lime juice and fresh coriander.

 

Why it’s good for gut health:
Prawns offer lean protein and minerals. Coconut milk and Thai spices are anti-inflammatory and support digestion.
