Ingredients
- 200g king prawns, peeled
- 1 tbsp coconut oil
- 2 tbsp Thai red curry paste (check gluten-free)
- 1/2 red onion, thinly sliced
- 1 carrot, julienned
- 150ml coconut milk
- 1 tbsp lime juice
- Fresh coriander to garnish
Method
- Heat coconut oil in a pan and sauté onion for 2 minutes.
- Add red curry paste and stir for 30 seconds.
- Add prawns, carrots, and coconut milk. Simmer for 10 minutes.
- Finish with lime juice and fresh coriander.
