Sweet Potato & Red Lentil Soup with Ginger

Ingredients

  • 1 tbsp olive oil

  • 1 onion, chopped

  • 2 garlic cloves, minced

  • 1 tbsp fresh ginger, grated

  • 1 tsp turmeric

  • 1 medium sweet potato, diced

  • 100g red lentils, rinsed

  • 1 litre vegetable stock

  • Juice of ½ lemon

  • Salt and pepper to taste

Method

  1. Heat olive oil in a large pot.

  2. Sauté onion, garlic, and ginger for 5 minutes.

  3. Add turmeric, sweet potato, lentils, and stock.

  4. Bring to a boil, then simmer for 20 minutes.

  5. Blend until smooth, add lemon juice, season, and serve.

Why it’s good:
Sweet potato and turmeric are anti-inflammatory. Ginger and lentils support gut and immune health.
