Ingredients
1 tbsp olive oil
1 onion, chopped
2 garlic cloves, minced
1 tbsp fresh ginger, grated
1 tsp turmeric
1 medium sweet potato, diced
100g red lentils, rinsed
1 litre vegetable stock
Juice of ½ lemon
Salt and pepper to taste
Method
Heat olive oil in a large pot.
Sauté onion, garlic, and ginger for 5 minutes.
Add turmeric, sweet potato, lentils, and stock.
Bring to a boil, then simmer for 20 minutes.
Blend until smooth, add lemon juice, season, and serve.
Why it’s good:
Sweet potato and turmeric are anti-inflammatory. Ginger and lentils support gut and immune health.
