Ingredients

  • 2 sweet potatoes, cubed

  • 2 cups chopped kale

  • 2 tbsp olive oil

  • Juice of 1 lemon

  • 2 tbsp sunflower seeds

  • Salt, pepper, paprika

Method

  1. Roast sweet potatoes 20 mins at 200°C.

  2. Massage kale with olive oil and lemon.

  3. Combine and add sunflower seeds + paprika.

Why it’s good for immune balance
Beta-carotene from sweet potato; kale gives vitamin C and K; seeds add vitamin E and zinc for immune cell support.
