Ingredients

  • 2 medium sweet potatoes, cubed

  • 1 tbsp olive oil

  • ½ tsp cinnamon

  • 1 cup rocket leaves

  • 50g feta (or vegan feta alternative)

  • 1 tbsp pumpkin seeds

  • 1 tsp balsamic vinegar

Method

  1. Roast sweet potatoes with olive oil and cinnamon for 25–30 minutes.

  2. Toss with rocket, crumble feta, and top with seeds and vinegar.

Why it’s good for mental health:
Sweet potatoes are rich in beta-carotene and complex carbs that support steady blood sugar for stable mood. Feta provides calcium and protein.
