Ingredients
2 medium sweet potatoes, cubed
1 tbsp olive oil
½ tsp cinnamon
1 cup rocket leaves
50g feta (or vegan feta alternative)
1 tbsp pumpkin seeds
1 tsp balsamic vinegar
Method
Roast sweet potatoes with olive oil and cinnamon for 25–30 minutes.
Toss with rocket, crumble feta, and top with seeds and vinegar.
