Ingredients
- 4 eggs
- 1 small sweet potato, grated
- 1 handful fresh watercress, chopped
- 1 tbsp olive oil
- 1/4 tsp sea salt
Method
- Preheat oven to 180°C and grease a small ovenproof dish.
- In a pan, sauté grated sweet potato in olive oil for 5 minutes.
- Whisk eggs with salt, then fold in sweet potato and watercress.
- Pour into the dish and bake for 20–25 minutes or until set.
Why this is good for lowering histamine:
Eggs are generally well tolerated when fresh. Sweet potatoes support gut lining health, and watercress is naturally anti-inflammatory and rich in vitamin C.
