Sweet Potato and Watercress Frittata (Egg-Based)

Ingredients

  • 4 eggs
  • 1 small sweet potato, grated
  • 1 handful fresh watercress, chopped
  • 1 tbsp olive oil
  • 1/4 tsp sea salt

Method

  1. Preheat oven to 180°C and grease a small ovenproof dish.
  2. In a pan, sauté grated sweet potato in olive oil for 5 minutes.
  3. Whisk eggs with salt, then fold in sweet potato and watercress.
  4. Pour into the dish and bake for 20–25 minutes or until set.

 

Why this is good for lowering histamine:
Eggs are generally well tolerated when fresh. Sweet potatoes support gut lining health, and watercress is naturally anti-inflammatory and rich in vitamin C.
