Ingredients
2 large red peppers, halved
1 cup cooked rice
1/4 cup chopped spinach
1/4 cup chopped olives
1/4 cup crumbled dairy-free feta-style cheese
1 tbsp olive oil
1/2 tsp oregano
Method
Mix rice, spinach, olives, herbs, and cheese.
Fill pepper halves with the mixture.
Bake at 200°C for 15 minutes.
Serve with a drizzle of olive oil.
