Ingredients

  • Four 6-ounce fillets of white fish (flounder, sole, cod, snapper)
  • Tamari sauce
  • Hot toasted sesame oil

Method

  1. Half-fill a wide, shallow saucepan with water to a boil.
  2. Turn the heat to low.
  3. Set a bamboo steamer inside the saucepan and line it with parchment, a few cabbage or lettuce leaves, or a plate. Place the fish in the prepared steamer, cover, and cook until it is opaque and flakes beautifully when nudged with a paring knife, 5 to 10 minutes, depending on the thickness of the fillets.
  4. Transfer the fish to a serving platter and finish it with a few drops of tamari sauce and sesame oil.
