Ingredients
1 can chickpeas, drained & rinsed
1 medium sweet potato, cooked and mashed
2 tbsp chickpea flour
1 tsp ground cumin
1 tsp smoked paprika
½ tsp ground coriander
Salt & pepper
2 tbsp chopped fresh coriander
Olive oil for frying
Method
Mash chickpeas in a bowl until coarse.
Mix in sweet potato, chickpea flour and spices.
Form mixture into small patties (about 6 cm wide).
Heat olive oil in a pan. Fry patties 3–4 mins each side until golden.
Drain on paper towel.

These are handheld, tasty and filling. Chickpeas provide fibre and protein; sweet potato gives slow-release carbs — a satisfying low-GI option guests can enjoy without a sugar spike.
