Spiced Chickpea & Sweet Potato Cakes (Vegan, Low-GI)

Ingredients

  • 1 can chickpeas, drained & rinsed

  • 1 medium sweet potato, cooked and mashed

  • 2 tbsp chickpea flour

  • 1 tsp ground cumin

  • 1 tsp smoked paprika

  • ½ tsp ground coriander

  • Salt & pepper

  • 2 tbsp chopped fresh coriander

  • Olive oil for frying

Method

  1. Mash chickpeas in a bowl until coarse.

  2. Mix in sweet potato, chickpea flour and spices.

  3. Form mixture into small patties (about 6 cm wide).

  4. Heat olive oil in a pan. Fry patties 3–4 mins each side until golden.

  5. Drain on paper towel.

Why it works for a buffet
These are handheld, tasty and filling. Chickpeas provide fibre and protein; sweet potato gives slow-release carbs — a satisfying low-GI option guests can enjoy without a sugar spike.
