Ingredients

  • 2 cups shiitake mushrooms, sliced

  • 2 carrots, sliced

  • 1 onion, diced

  • 1 tbsp grated ginger

  • 2 garlic cloves, crushed

  • 4 cups vegetable broth

  • 1 tbsp tamari

  • 1 tsp sesame oil

  • 2 spring onions, sliced

Method

  1. Sauté onion, garlic, and ginger.

  2. Add mushrooms and carrots; cook 5 mins.

  3. Add broth and tamari; simmer 10 mins.

  4. Finish with sesame oil and spring onions.

Why it’s good for immune balance
Shiitake contains beta-glucans for healthy immune function; ginger supports gut-immune communication; broth soothes digestion.
