Ingredients
2 cups shiitake mushrooms, sliced
2 carrots, sliced
1 onion, diced
1 tbsp grated ginger
2 garlic cloves, crushed
4 cups vegetable broth
1 tbsp tamari
1 tsp sesame oil
2 spring onions, sliced
Method
Sauté onion, garlic, and ginger.
Add mushrooms and carrots; cook 5 mins.
Add broth and tamari; simmer 10 mins.
Finish with sesame oil and spring onions.
