Ingredients

  • 1 tin sardines in olive oil
  • 250g baby potatoes
  • 2 large handfuls watercress
  • 4 radishes, sliced
  • Juice of ½ lemon
  • Fresh parsley
  • Black pepper

Method

  • Boil the baby potatoes until tender and allow them to cool slightly.
  • Arrange the potatoes with the watercress and sliced radishes.
  • Add the sardines.
  • Finish with lemon juice, parsley and black pepper.


Why it’s good

This light summer meal is a satisfying alternative to processed lunches. Potatoes are naturally rich in potassium, while sardines provide calcium and healthy omega-3 fats. Watercress contributes additional minerals, making this a balanced meal to help replenish electrolytes naturally.
