Ingredients

  • 2 salmon fillets

  • 1 cup cooked green lentils

  • 1 courgette, sliced

  • 1 red pepper, sliced

  • 1 tbsp olive oil

  • Juice of ½ lemon

Method

  1. Preheat oven to 200°C.

  2. Place vegetables and lentils on a tray, drizzle with olive oil.

  3. Place salmon on top, season, and bake 20–25 mins.

  4. Drizzle with lemon juice to serve.

Why it’s good for gut health:
Lentils add fibre, while salmon provides omega-3s to reduce inflammation and support gut lining
