Ingredients

  • 4 skinless chicken thighs

  • 2 sweet potatoes, peeled and diced

  • 1 tbsp olive oil

  • 1 tsp dried rosemary

  • Salt and pepper

Method

  1. Season chicken with rosemary, salt, and pepper.

  2. Bake at 200°C for 30 minutes.

  3. Boil and mash sweet potatoes.

  4. Serve chicken on mash.

Why it’s good:
Sweet potatoes and rosemary reduce inflammation. Chicken provides lean protein to support repair.
