Ingredients
3 red peppers, roasted, skins removed
½ cup walnuts, toasted
1 garlic clove
2 tbsp extra virgin olive oil
1 tbsp lemon juice
1 tsp smoked paprika
1 tsp ground cumin
Pinch of chilli flakes (optional)
Salt & pepper
Assorted vegetable sticks for dipping (carrot, celery, cucumber) or gluten-free dippers
Method
In a food processor, blend roasted peppers, walnuts, garlic, oil, lemon juice and spices until smooth-dip texture.
Season to taste. Chill if preferred. Serve with veggie sticks.
