Ingredients
- 4 slices gluten-free sourdough
- 1 whole garlic bulb
- 1 tin butter beans, drained
- 2 handfuls baby spinach
- 2 tbsp extra virgin olive oil
- Fresh parsley
- Black pepper
Method
- Roast the garlic until soft.
- Mash the butter beans with the roasted garlic.
- Wilt the spinach gently in a pan.
- Toast the gluten-free sourdough.
- Spread the bean mixture over the toast.
- Top with spinach, parsley and a drizzle of olive oil.
