Ingredients

  • 3 very ripe banana’s
  • 6 large eggs at room temperature 
  • 3 tablespoons of nut butter, almond, walnut butter or mixed
  • 1 teaspoon of vanilla extract 
  • ¾ cup of coconut flour 
  • 1.5 teaspoons of ground cinnamon
  • ¾ teaspoon baking soda
  • ¼ teaspoon of ground nutmeg
  • 1/8 tsp salt

Method

  1. Turn oven to 160 degrees C
  2. Mash 3 ripe bananas in a metal bowl with a fork 
  3. Add the dry ingredients 
  4. Add the eggs 
  5. Whizz all together with a handheld blender until smooth 
  6. Place in a loaf tin
  7. Place in the bottom of the oven (as the top tends to burn if too close to the top)
  8. Leave in for 45-50 minutes, take out and pierce with a fine cake probe to check inside is cooked 
  9. Let it sit for 15 minutes,  otherwise it can go flat if you remove it from the tin too soon

 

Slice and serve with some walnut butter, or nut butter of your choice. (aim for palm oil free and sugar free/ sweetener free)
