Ingredients

  • 1kg of Salmon Fillet (cut into 1-inch cubes
  • 1kg of Pineapple (cut into 1-inch cubes)
  • 3 tbsp Extra Virgin Olive Oil
  • 85g Honey
  • 60ml Lemon Juice
  • 4 Garlic (cloves. minced)
  • 4g Ginger (fresh. grated)
  • 4g Red Pepper Flakes
  • Sea Salt & Black Pepper (to taste)
  • 4 Spring Onions (optional. garnish)

Method

  1. Thread the salmon and pineapple onto the skewers
  2. In a small bowl, whisk together the oil, honey, lemon juice, garlic, ginger, red pepper flakes, sea salt and pepper.
  3. Brush the marinade onto the skewers
  4. Grill the skewers for eight to ten minutes, or until the salmon is cooked through.
  5. Garnish with sliced spring onion and enjoy!
