Ingredients

  • 400g firm tofu, cubed

  • 2 tbsp tikka masala paste (gluten-free)

  • 200ml coconut yoghurt

  • 1 red onion, cut into chunks

  • 1 bell pepper, cut into chunks

  • Skewers

Method

  1. Mix tikka paste and coconut yoghurt, marinate tofu for 1 hour.

  2. Thread tofu, onion, and pepper onto skewers.

  3. Grill for 10 minutes, turning occasionally.

  4. Serve hot.

Why it’s good:
Tofu provides plant-based protein, and grilling enhances flavour without added fats.
