Ingredients
- 2 organic lamb chops
- 1 tbsp olive oil
- 1/2 tsp rosemary
- 2 medium parsnips, peeled and chopped
- 2 cups kale, chopped
Method
- Rub lamb chops with olive oil and rosemary.
- Grill or pan-fry for 4–5 minutes per side.
- Boil parsnips until soft, then mash with olive oil and sea salt.
- Steam kale for 5 minutes. Serve with lamb and mash.
