Ingredients

  • 2–3 organic eggs

  • 1 cup spinach

  • 1 tbsp olive oil

  • 2 tbsp sauerkraut (raw)

  • Pinch turmeric

  • Sea salt & pepper

Method

  1. Whisk eggs with turmeric.

  2. Sauté spinach in olive oil.

  3. Add eggs and cook until set.

  4. Serve with sauerkraut on top (do not heat).

Why it’s good for immune balance
Eggs give vitamin D & zinc; spinach adds folate & antioxidants; sauerkraut provides beneficial microbes.
