Ingredients
300g organic chicken thigh pieces
1 tbsp olive oil
200g mushrooms, sliced
1 onion, diced
2 garlic cloves, crushed
1 tsp thyme
500ml chicken stock
1 tbsp lemon juice
Salt and pepper
Method
- Brown chicken in olive oil.
- Add onion and garlic.
- Add mushrooms and thyme.
- Pour in stock and simmer 20 minutes.
- Add lemon juice and season.
Why it’s good:
Mushrooms supply vitamin D. Garlic offers antiviral support. Chicken provides immune-supporting amino acids.
