Ingredients

  • 3 free-range eggs

  • 1 tbsp olive oil

  • 1 cup mushrooms, sliced

  • 1 cup spinach

  • 1 tbsp pumpkin seeds

  • Salt and pepper

Method

  1. Sauté mushrooms in olive oil, add spinach until wilted.

  2. Beat eggs, pour over veg, and cook gently until set.

  3. Sprinkle pumpkin seeds before serving.

Why it’s good for mental health:
Eggs provide choline for neurotransmitter synthesis. Pumpkin seeds offer zinc and magnesium, both vital for stress reduction.
