Ingredients

  • 400g mushrooms, diced

  • 200g cooked chestnuts, chopped

  • 1 onion, diced

  • 2 carrots, diced

  • 2 cups vegetable stock

  • 2 tbsp olive oil

  • 3 large potatoes, mashed with olive oil

Method

  1. Sauté mushrooms, carrots, and onion.

  2. Add chestnuts and stock.

  3. Simmer until thick.

  4. Top with mash and bake 15 minutes.


Why it’s good

Mushrooms contain vitamin D. Chestnuts support energy. A warm, hearty option for colder evenings.
