Ingredients
- 1 tbsp olive oil
- 1/2 onion, chopped
- 2 garlic cloves, minced
- 1 tsp ground cumin
- 1/2 tsp cinnamon
- 1/2 tsp turmeric
- 1/2 head cauliflower, broken into florets
- 1 carrot, sliced
- 1 small courgette, chopped
- 1/2 cup chopped tomatoes
- 1/2 cup vegetable broth
- Fresh coriander to garnish
Method
- Heat olive oil and sauté onion for 3–4 minutes.
- Add garlic and spices, stir until fragrant.
- Add cauliflower, carrot, courgette, tomatoes, and broth.
- Cover and simmer for 25–30 minutes until vegetables are tender.
- Garnish with fresh coriander before serving.
