Ingredients

  • 1 cup chickpea flour

  • 1 cup water

  • 1 tbsp olive oil

  • 1/4 tsp sea salt

  • 1/4 tsp turmeric

  • 1/2 red onion, finely chopped

  • 1 small tomato, diced

  • 2 tbsp fresh parsley, chopped

Method

  1. In a bowl, whisk chickpea flour, water, salt, turmeric, and olive oil.

  2. Stir in chopped onion, tomato, and parsley.

  3. Heat a non-stick pan, pour in batter to form small pancakes.

  4. Cook each side for 2–3 minutes until golden.

  5. Serve warm with a side of fresh rocket or tahini drizzle.

Chickpea flour is high in fibre and protein, supports blood sugar balance, and feeds beneficial gut bacteria.
