Ingredients
1 cup chickpea flour
1 cup water
1 tbsp olive oil
1/4 tsp sea salt
1/4 tsp turmeric
1/2 red onion, finely chopped
1 small tomato, diced
2 tbsp fresh parsley, chopped
Method
In a bowl, whisk chickpea flour, water, salt, turmeric, and olive oil.
Stir in chopped onion, tomato, and parsley.
Heat a non-stick pan, pour in batter to form small pancakes.
Cook each side for 2–3 minutes until golden.
Serve warm with a side of fresh rocket or tahini drizzle.
