Ingredients

  • 2 mackerel fillets

  • 1 courgette, sliced

  • 1 red pepper, sliced

  • 1 tbsp olive oil

  • Sea salt and pepper

Method

  1. Preheat oven to 200°C.

  2. Toss courgette and pepper in olive oil, roast 15 minutes.

  3. Add mackerel on top and cook for 8–10 minutes.

Why it’s good for eye health:
Mackerel is rich in omega-3s, and colourful vegetables provide carotenoids and vitamin C to nourish the eyes.
