Ingredients
1 cup green lentils, rinsed
1 tbsp olive oil
1 onion, finely chopped
2 garlic cloves, minced
2 carrots, diced
1 celery stick, diced
1 tsp smoked paprika
1 tbsp tomato paste
3 cups vegetable broth
½ cup crushed walnuts
1 tbsp tamari sauce
Salt and pepper to taste
Method
Heat olive oil, sauté onion and garlic until soft.
Add carrots, celery, and paprika; cook for 5 minutes.
Stir in lentils, tomato paste, and broth. Simmer for 25 minutes.
Add walnuts and tamari; cook 5 minutes more. Season and serve.

Lentils supply folate and magnesium for neurotransmitter balance. Walnuts are rich in omega-3s, which reduce inflammation linked to depression.
