Ingredients

  • 1 cup green lentils, rinsed

  • 1 tbsp olive oil

  • 1 onion, finely chopped

  • 2 garlic cloves, minced

  • 2 carrots, diced

  • 1 celery stick, diced

  • 1 tsp smoked paprika

  • 1 tbsp tomato paste

  • 3 cups vegetable broth

  • ½ cup crushed walnuts

  • 1 tbsp tamari sauce

  • Salt and pepper to taste

Method

  1. Heat olive oil, sauté onion and garlic until soft.

  2. Add carrots, celery, and paprika; cook for 5 minutes.

  3. Stir in lentils, tomato paste, and broth. Simmer for 25 minutes.

  4. Add walnuts and tamari; cook 5 minutes more. Season and serve.

Why it’s good for mental health:
Lentils supply folate and magnesium for neurotransmitter balance. Walnuts are rich in omega-3s, which reduce inflammation linked to depression.
